Potato and Chili Frittata
In a large cast-iron skillet over medium heat, fry up six strips of bacon (chopped) until the fat renders. Toss in a cup and a half of chopped sweet and hot peppers (your choice of varieties) and cook until they are soft. Drain the excess bacon grease from the pan, then season with salt, pepper, and dried red pepper flakes.
Place the skillet back on the stove at medium heat. Toss in a cup and a half of cubed, parboiled potatoes. Cook until the potatoes are a bit browned. Slowly pour in a dozen beaten eggs into the skillet. Stir the eggs and potatoes a bit to distribute the vegetables evenly. Take the pan off the heat, sprinkle enough feta cheese to cover the top, and place it under a broiler to melt the cheese and make the eggs set.
